Homemade granola bars

I made these very easy granola bars yesterday between bringing Ella home from school and making dinner. They have only a few simple ingredients and hardly any steps at all. I don't think I will ever buy granola bars again...

Here is the recipe:

Homemade Granola Bars

1 can condensed milk
1/2c dried cranberries
1/2c dried goji berries
2 1/2c muesli

Although these bars turned out really delicious, the next time I make them I will use at least one extra 1/2c of muesli and more likely an extra full cup. Unless you like your granola bars really chewy than I would recommend you add more muesli as well.

Preheat oven to 260C and line a 9 x 13in dish with parchment paper.

Pour condensed milk in a saucepan and warm it up over a medium heat. Stir regularly to be sure it doesn't burn. This should only take a couple of minutes. You will notice it's warming up when the milk starts to thin out.

Once the milk has warmed up you can turn off the heat and add your dried fruit (you can experiment with different types to see what you like) and give it a stir.

Next, stir in your muesli.

This is the kind I used:

Pour ingredients into your parchment lined dish, and flatten down with your hand or a spoon.

Cook for approx 45-50min. Keep checking to be sure they aren't getting burnt. The longer you cook the more crunchy they will be. If you like a chewier bar than cut back the cooking time.

And there you have it, a tasty granola bar that's good for breakfast or an anytime treat.
